Struck with the sudden desire to watch DS9 (especially since I lost my access to regular episodes around the time the dominion arc started getting good so I've never seen the end)

But it's a case of too many episodes too little time. Anyone able to recommend a good episode watching guide?

I tried googling but there are a lot of lists and I can't tell which are any good! Suspect someone here knows my pain :3

It's...diffifult to say, given how heavily arc-based DS9 is. There's some excellent shows in the later seasons, to be sure, but hard to recommend individual ones without saying "just watch the whole season", given that many of them don't make sense without the rest of the arc.

That said, some of the better ones that stand on their own (imo, ymmv, etc):

5x06 - Trials and Tribble-ations
5x16 - Doctor Bashir, I Presume
6x13 - Far Beyond The Stars
6x19 - In The Pale Moonlight (which will probably be a love-or-hate - fandom opinion is SHARPLY divided)
7x15 - Badda Bing, Badda Bang


The mini-arc from 5x26 (Call to Arms) through 6x06 (Sacrifice of Angels) also makes for a solid Dominion War focused plot that doesn't take too long to watch.

It's very arc based, as Woggy said.

I'd just start the whole thing over and watch it all, if you can.

Unfortunately I have nothing intelligent to add, but awwww, DS9! My favorite Trek of all time. <333 A lot of the eps woggy mentions are great.
